1048 to 1015 in 2 days?!

1048 to 1015 in 2 days?!

I completed my 3rd all grain on saturday and after a slow ferment last time pitched slightly more yeast and rehydrated the S04 using the instructions on the fermentis web site. 48hrs in and fermentation has dropped off significantly and the SG reads 1015. Is it possible that it's fermented out that quickly, i know S04 works quickly, but that's ridiculous?!

My previous 2 brews have stopped at around this point, no 1 stopped at 1013 and no 2 stopped at 1015. Is this brew likely to get any lower, should I rouse the wort or just let it sit there for another 8 days?

Also will pitching extra yeast have caused any side effects?

S-04 does work quick but it may still drop another point or two. I always leave it between 7-10 days regardless so the yeast can clear up after itself. You'll have no bother having pitched more yeast - it might just take a bit longer to clear, but with S-04 that's unlikely to be a problem anyway. Just leave it to do its thing 8)

Is there any more risk of infection just leaving it sat there after fermentation is complete?

Plus, the final gravity depends on the ingredients too - if you've used more crystal or roasted grains you can expect a higher f.g. My stouts always seem to finish in the 1.020's. My technique is pretty simple, leave it sitting for a couple of weeks no matter what it seems to be doing - usually seems to work fine.

I need some kind of zen brewing master to bring me patience - I won't have a peek, but the leaving it alone for a couple of weeks is a good plan. It would help if the beer wasn't in the hall meaning that i have to walk past it all the time.

S04 is blazingly fast. I have a beer in the FV that was brewed on Sunday afternoon and it's down from 1060 to 1012 already.

Yeah, it's a bit of a shock when you use something else - I'm doing one with Wyeast #1007 at the moment and it's creeping down at about 3 - 4 points a day. A bit worrying when you're used to S-04 but at least it's approaching target now after 10 days.
