As for the Coriander and Orange, Hoegaarden is fairly gentle with their spices. You could get away with quite a bit, I think, so be generous with it and you'll probably end up with a rather more interesting and characterful beer than the original. (Lots of the aroma is lost through the airlock.)

I made a very successful wheat beer along similar lines using a couple of bunches of lemongrass, also from an ethnic grocer. Just shred it up and chuck it in, replacement for the orange...

This has turned out rather well. I kegged it about 3 weeks ago and drew off the first few pints last night with a group of friends. End result is a pretty tasty wit and not dissimilar to Hoegaarden. It looks spot on and smells spot on, with the only differences being the original has a fruitier aftertaste (maybe as I can’t control my fermentation temperatures) and mine is slightly more bitter. It got the thumbs up from all who drank it though, will definitely do another one once this batch is nearly done. Thanks Mysterio for all the advice along the way.
