How does this sound

Post by Deebee » Wed Jun 17, 2009 4:59 am

I was meant to be doing the tangle foot clone. But in the absence of challenger, changed things very slightly.

3550 halcyon pale
770 g sugar
hops
18 g east kent 90 mins
10g northdown 90 mins

15 g irish moss 15
20 g northdown 15
total 21 liters, OG 1056. What can i expect final gravity vm be and how does this sound?

Dave, you haven't said which yeast you are using, but if you use Nottingham you'll get something in between 1010 - 1015, although it might be a bit lower with that sugar in the recipe

Do you get 80% efficiency? this is what the recipe seems to be set at, as that is what is needed to get an OG of 1056 for 21 litres,

if your efficiency is lower say 70% you may want to up the pale to about 3.8 kg and the sugar up to 840g

Although I have heard you get a good yield from Halcyon malt, higher than Maris Otter.

Thanks. It was safe ale04.
Don't know efficiancy though.
Mash temp started cv 66.8
it dropped .5 over 90 mins. Sparging was cv 76.8 throughout. I stopped sparging because it was just clear water coming out after 20 liters.
Ã…m hoping for around 1014 about 5.7 %?
Not sure whether vm dry hop though. Thoughts?

1014 sounds about right for S-04 it is a bit less attentive than Nottingham, you'll get a slightly sweeter beer with it. 1057 - 1014 will give you your 5.6-5.7%

you should stop sparging when the run off from the mash tun drops below 1010 and try not to go below 1006.

0.5 degree drop over 90 mins is very good, are you using a coolbox to mash in?

you could dry hop with 10-15g of Goldings in the keg, it will give a floral type aroma which is quite pleasant.

yes i used a cool box, but it was in the kitchen and the kitchen was warn so this may explain it.
Seeing as some of the run offs were almost totally clear does this mean the grain was totally " exhausted"

I will be using mini kegs ( 5 litres) so i guess that say 4-5 grams of hops in the keg is enough?

I'll have a test anfd find the new reading tonight in order to find out how the fermenting is going after 48 hours.

How much drop should i expect?

It may have looked very clear as it was only pale malt without anything else like crystal, on the other hand it may have had nothing left to give, once all the sugary goodness is gone there is a risk of leeching tannins from the husks, and that is why you don't sparge below 1006.

yeah 5g in each minicask sounds about right. How are you keeping them from clogging the tap?

if it's been a vigourous ferment, it may be down to 1020 or so.

I put the hops into small sterilized tube-i gauze and put that into the cask. Like a tea bag.

works well, just a little difficult getting it out.
