That looks like Elderflower to me and as for keeping in the freezer, why not.That's how we keep the Hops fresh. You can buy them dried as well but damp cardboard seems to be the general consensus when they are in that state. Get a brew on and use them fresh. You'll not regret it...lol

I won't be able to brew with them right away as i am going back offshore in less than a week & still have a 120 litre brew in the fermenter fermenting away .I have kept heather flowers before in the freezer & they seem to keep very well hopefully Elderflowers keep well too. I will make a pale ale with them when i get home what quantity would i use & would a 15 minutes & a 80oc steep after switch-off be good .Cheers

Well I'm sure that there are plenty of guys and gals on the forum that would be happy to assist you with that particular dilemma. Form an orderly queue everyone to help out a fellow brewer...I'm first in line though :beer: :beer: :beer: mmmmm BEER!

Seriously, For my last AG brew I used fresh picked Elderflower 80gm @ 15min and 120gm at switch off. I put some Amarillo in at 15min as well but only 15gms to complement the aroma. Should be fermented next week when I will be in a better position to advise on more or less Elderflower.

This year is my second attempt at EF champagne. Last years effort got bottles into 38 wine bottles and left in the cellar. I don't know if the ambient temp raised a few deg or what but on night while having tea with SWMBO we were cerenaded with the sound of 38 bottles popping their corks and exploding! :evil: ](*,) ](*,) ](*,) Damb that HFW LOL. I've learnt alot about brewing in the last 12 months so hopefully this years 70L batch will turn out alot better! I might even get to drink some of it!
