Alternative to Carafa Special

Post by Subsonic » Mon Aug 03, 2009 3:40 pm

I am brewing a batch of 4 seasons stout. Maris otter 5.65kg, Flaked Barley 0.87kg, Amber malt 0.43kg, Chocolate malt (light) 0.43kg, Roasted Barley 0.35kg, Carafa special 0.35kg (thanks Garth for the recipe!) But...I cannot get the carafa special from my supplier and need the stuff asap as I am brewing Saturday. Can anyone suggets an alternative for this? Or a site that can deliver it to me by Saturday?

Cheers for any info. Subsonic.

Which special I II or III?

I think i've read somewhere that doing a cold overnight steep with three times as much ordinary roasted malt produces something very similar.
