Excuse my ignorance, but would somebody please tell me the pros and cons, dos and don'ts and when and when nots of campden tablets?

Its easier to dose and handle. Especially for the wine lot.

I can testify to what Chris has said about the fumes. I have asthema, a very mild dose - an inhaler (containing 200 doses) will last me years.
I keep a 10% stock solution of sodium metabisulphite as a no-rinse steraliser and if I happen to catch a sniff of the fumes I can't breathe properly for hours.

Its best crushed underneath a metal teaspoon as its quite crumbly. I do this in a saucepan and gently heat a small amount of water with it, stirring all the while.
