Excuse my ignorance, but would somebody please tell me the pros and cons, dos and don'ts and when and when nots of campden tablets?

something I have always wondered, why Tablets and not a powder??

Its easier to dose and handle. Especially for the wine lot.

I can testify to what Chris has said about the fumes. I have asthema, a very mild dose - an inhaler (containing 200 doses) will last me years.
I keep a 10% stock solution of sodium metabisulphite as a no-rinse steraliser and if I happen to catch a sniff of the fumes I can't breathe properly for hours.

and if you add Citic Acid don't even think about dipping your head in the bucket :twisted:

yeah I did that too many years ago and went into anaphylactic shock. Always have to learn the hard way...

Its best crushed underneath a metal teaspoon as its quite crumbly. I do this in a saucepan and gently heat a small amount of water with it, stirring all the while. Once its dissolved, chuck it in your brewing liquor.
