Does anyone brew in their cellar, i'm looking at moving and it has plenty of 'underfloor space' with a plumbed in water supply. My only concern is the vapour from the boil - has anyone already got a solution for this?

You are right to be concerned...............that's a lot of moisture to be hanging around.
The answer is simple..........It's just a matter of sourcing the right gear. You will need some type of industrial extractor fan (commercial kitchen, paint spraying etc) This is best ducted from a canopy over the boiler direct to the outside of your building. You may even be able to find a scrap domestic kitchen canopy. If you are lucky you may find one with a strong enough fan (the filters can be removed to increase the flow)
The other option would be to condense the vapour by again ducting it away, cooling and collecting the run off.............loads of info on line about building a still, it's the same principle

I wonder whether something could be fashioned from an adapted lid, a length of venting tube and a fan within the tube? I guess this could be vented up the coal shute?

Ahh, cellars are damp anyway! 
Fermenting in a cellar is actually more dangerous than boiling because of the CO2 produced. There were cases in the 18th and 19th centuries where people went into beer storage cellars and suffocated. I don't suppose 40pints at a time will create dangerous amounts though.

The principle sounds ok.
