Strong Stout

Gonna be doing the following on Thursday.

2 GALLON BATCH

3KG PALE
1KG FLAKED BARLEY
250G ROAST BARLEY

Does this sound ok?

A couple of questions!

i want it to be about 7.5% so am pressuming i don't need to add any sugar?
Also i have First Gold hops at 6.2% AA what quantity should i use,(was thinking about 50g)

I reckon you should half the flaked barley. That seems too much IMO.

Here's what I would do:

Untitled Recipe
0- Untitled Style

Size: 11.5 L
Efficiency: 75.0%
Attenuation: 75.0%
Calories: 253.93 kcal per 12.0 fl oz

Original Gravity: 1.076 (1.000 - 1.100)
Terminal Gravity: 1.019 (1.000 - 1.100)
Color: 30.6 (0.0 - 50.0)
Alcohol: 7.51% (0.0% - 10.0%)
Bitterness: 40.4 (0.0 - 50.0)

Ingredients:
2.5 kg Liquid Light Extract
500 g Barley Flaked
250 g Roasted Barley
30.0 g First Gold (6.2%) - added during boil, boiled 90 min

Will cut the flaked barley down to 500g and go for 30g of hops.
Can't wait to get going now!!!

I just thought I might point out that floydmeddler is suggesting 2.5kg extract in 11.5L. If you use 3kg extract in 2 gallons you will be looking at either 11% beer or sweet beer (if the yeast can't handle strong alcohol). If you're restricted on boiling capacity and want to use the full 3kg you could consider diluting post-boil - make up to about 13 - 14L. You might also want to increase the hops if you do it this way.
A fine beer may be judged with only one sip, but it's better to be thoroughly sure.

All went well yesterday!
Ended up with 11 litres at 1075 and its fermenting away nicely.
Will transfer to secondary after a week and then on to the next one!!!
