Acid malt - beer engine values

Post by Jerry Cornelius » Sat Oct 03, 2009 7:38 pm

I want to do the Broadside recipe from BYOBRA, so I thought I'd add as a recipe to GW's beer engine. But Acid malt doesn't figure in the Grains list. I want to add it, but don't know any of the values.

Can anyone help?

Promash lists it as 1035 and an EBC of 3

Hop and Grape also lists the EBC as 3-5 EBC

Thanks Garth. But I'm still a bit lost

There's two fields I'm not sure of:

Extract xxx LDX
Fermentability xxx %

I'm trying to work out what my efficiency will be, so I'm guessing that these need to be filled in. I don't know where the 1035 value you gave should go??

Have a look at another grain that's already in the database, and give me an example, that may help further

Yield is given as 75% if that's any help

Another point to bear in mind is that acid malt will lower your ph a fair bit. I used it in one of my Broadside attempts and the mash ph was at 4.6 because i treated my liquor with CRS as normal. I would recommend using less of whatever it is you use to reduce alkalinity, but i can't say how much less. The beer I made was for a friend who is still struggling through it. It's a bit naff and it gives him headache's, although I have not tried it myself.

That's something I didn't know. I use 40 ml CRS in 36 L water, so perhaps I'll use 30 ml or so. I must confess that I've never checked the PH. I also add 1 tsp Gypsum in the mash. Don't know if that would help or not.

We are using similar amounts of CRS. It's worth checking your ph as it can make a huge difference if it's not right. I might try 20-25ml CRS, but that's just a guess.

The Gypsum also helps to reduce mash ph whilst increasing calcium levels which is fairly important if you have low calcium content in your water.
