I have only ever left a beer for acouple of weeks once. It was crystal clear and did not carbonate after bottling. I experimented with not priming a high OG beer. I bottled a little before my expected FG. I'm drinking it now and it's well primed and very nice.
However from another batch, I have a few bottles of 'a little on the flat side beer' that I did prime. I wanted to see what kind of carbonation I'd get with different amounts of sugar, so I did a few bottles with less as an experiment. It failed

My advice would be to prime. I think with a high OG and time you can get away with i,t but dissolving some sugar in a jugful of beer is probably the easiest part of the brewing process. Not worth risking it.

I tried priming with 2 grmms per bottle and got a nice carbonation(just a tad under what i think of as the sweet spot, nice head and carbonation rising from bottom of glass but not at all volcanic). Upped on the newest brew to 2.75grmms per bottle. Will revert with update in a bit.
