I'm getting a bid fed up of using S-04 and S-05 in my brews , ive made around seven and they all seem to taste more or less the same.Ive used various recipies but the hops seem very weak no matter what i put in.

Just tried Morrisons own brand ale the one with the green hoppy label on thats what I would like to brew any ideas what's the best yeast would be.

try liquid yeast, you will see difference

I also like Nottingham. Have only used one liquid yeast and have had problems with wither that or the something else. I like Nottingham as it alows at least some of the hops to come through. Liquid yeast will likely get anothe go one day though.. when i have the time t make a decent starter with it ( the last time was a rather opportunistic brewday;)

I'm not sure a different yeast will achieve what you want, US05 leaves a clean crisp beer that should please you with regards to the hops being up front. Nottingham is similar, a neutral (bland) yeast that's not as crisp as US05.

The American ale yeast strains from Wyeast and White labs have clean fermenting profiles, while the English ale strains tend to be more fruity, (not always) have a look at the web sites for descriptions. H&G sell some White lab and Wyeast plus Wyeast is readily available elsewhere.

White Labs English ale is a very widely used yeast with good properties, give that a go. Another solution is just to add more hops. I find if I want a good hoppy beer using Nottingham or S05, comparable to a good commercial hoppy beer, i'm adding in the region of 100g of late hops per 23 L. Before I started piling in the late hops, my beers were all very similar, just a sweet tasting malty liquid. Using a yeast like 05 won't add hop flavour to your beer, only put an accent on what is already there.

If you're wanting to emulate English ales like you get in the pub, then definately look into the liquid English yeasts.
