A weak hefe that needs some help!

I have recently brewed a hefe which some of you may have seen here. It has finished now and after having a sample last night I am a bit disappointed. It does not seem to have the banana/clove that I was hoping for with the Munich yeast. also I think the hop utilisation was a bit crap as it is very malty, even for a hefe, and quite bland.

My question is what would you all do?

1: dry hop to get some flavour (even though it is not usual practice for the style
2: Add some orange peel/coriander seed to the secondary


Like the cat with cheese in his mouth. I wait with baited breath! :lol:

Dry hop it I say

Try the White Labs WLP300 next time, produces a very authentic hefe.

I had a similar problem with a Hefe made with Danstar Munich. I won't be using it again.

The problem is, Hefe is such a yeast focussed beer that if you don't get the yeast flavours, then you aren't left with much at all.

I found with my one, that it did get better with age. Not more yeast character, but just more like an OK light lager.....I'm nearly finished it now, but I didn't do anything else to it, just left it sit for a few weeks and gradually drank it.
