I've just done my first "cold day" brew and my boil-off worked out less than I would normally expect on a warmer day. I reckon I'm about 2-3 litres under what I was hoping for (i.e. I have 2-3 litres more wort than I was banking on).
Two things: first my OG is a couple of points lower than expected (no problem there), but my fermenter is fuller. I reckon there's about 5-7cm headspace above the wort. Is this going to be enough for the yeast-head or should I syphon some out?

Not a problem, certainly not significant enough to warrant chucking wort away.
