Too long in secondary fermentation

Post by escapizm » Sat Dec 19, 2009 2:41 pm

I've just realised I've left some bottles in the secondary carbonation stage for about 3 weeks, was thinking once all the primimung sugars gone it gone regardless off time...

Will they be ok, they're in the garage now chillin.

Hi - i wounldn't be too concerned, if I think what you mean is that your beers are now bottled and cold, then your'e fine.

I follow the rule of one week in a warm place, two weeks in a colder place - but given that my beers then stay in the colder place whilst i get through them, then it's the same thing.

I find the beers do mature slightly in taste as they get older, but this is normal.
