Carafa III
Anyone got any advice for adding carafa iii to beer engine? I've found an EBC of 1050 for it but cant find an LDK value or a fermentability %.

Ive just used some of this in a Black Dog Stout brew I did a couple of weeks back, boy is it strong!

Thanks, Ill have a look at that.
When you say its strong, how do you mean? I'm hoping it will give my brew a lot of black colour without adding too much roasty/burnt flavour. I've read that it's meant to do the job of black malt but isn't so roasty/burnt/bitter in flavour.

Well TBQH this is the very first stout I have ever made so I am no expert but it has lovely dark rich flavours like coffee and liquorice.
To me it does taste a little 'oaky' and 'burnt' but then again I am untrained in the dark ways of the black stuff!
Nevertheless it tastes bloody marvelous
Be prepared to give your boiler a good scrub it took me agea to get it all out

Haha, thanks for the info. I did a Guiness clone a little while back, so I know what you mean. What other malts did you use? I didn't use Carafa in my Guinness clone but did use roasted barley and you get a very pronounced roasted/bitter/coffee flavour from that. Hmmm Im not sure, like I say Im not the best judge. Was the head on your GC very brown? Maybe this is one of the attributes from the Carafa III.
If you ask ADM he will probably know, I got the recipe from him.

I brewed a bitter recently with a tiny amount of carafa an it gave it a... hang on, I'll just pour off a glass...

Not sure if you know of, but Carafa III Special is the de-husked version of this and does give less of the bitterness you get from that of normal carafa or roast.

Just used some carafa special III in a four shades of stout yesterday. The wort had a fantastic smokey, coffe, liquorice flavour that was more pronounced than the stout I brewed a few weeks before without it. Looking forward to tasting it.

Interesting. I'd been told that Carafa III was preferable to black malt where you want the colour but not the flavour or black malt. Seems what you've seen doesn't agree with that. I've 'migrated' to Carafa II which is a bit less 'in your face' and is an excellent malt for dark milds - especially when combined with choc malt.
