what to brew?

hi,

i have to make 40pt of my wifes 40th in 6 weeks and was thinking of brewing a pressure barrel of 'ale' for it but what to brew?

i have got larger malt, dark crystal, light crystal, roasted barley, flaked barley, roast chocolate, dark wheat barley, oats and wheat malt.

i am a bit of a German wheat beer fan but i was thinking of doing something more English ale like that most should like?

oh the yeast i have is safale s 04 and Nottingham? and hops are Saaz Amarillo simco bobek and east kent???

If you were to think more of an American Pale Ale, Saaz & Amarillo are going to make a Tasty beer as late hopping (I'd use at least double the amount of Saaz to Amarillo), bitter it with the Simcoe maybe.
Something like 80% Lager malt, 10% Wheat Malt, 5% Oat Malt, 2.5% Dark Crystal, 2.5% Light Crystal
Colour & some caramel notes from the Crystal, Head retention and a bit of dryness from the Wheat, and a silky edge from the Oats.
Ferment with Nottingham.
I reckon I'd drink that ;)

I'd do a light summer ale, something like:

85% lager
10% wheat
5% light crystal

Lots of bobek and amarillo, all close to the end. Ferment with notts.

Should go down with lads and lasses alike, as well as with those who only usually drink lager.
