Missed the OG by a country mile.

AS the title says I completely missed my OG on a wheat beer I was making. According to beersmith it should have landed bang on 1057, however I managed to get 1048. It was a wheat beer, so I'm wondering does this have anything to do with it? I think I may have sparged at a slightly too low temperature and this caused the gummy wheat to hang onto the sugars. I'm planning topping it up with some DME, but it'll have to wait until I can get it sent by mail order.

If it is the first time you have used Beersmith you might have the efficiency set too high. The program seems to greatly overestimate on default settings. Through trial and error I've found that a setting of 65% efficiency works for my batch sparging setup. I've used the efficiency calcs Jim has listed on the hints and tips section to check and my efficiency is more like 75%.

Did you adjust the reading for the temperature difference?
