Until it's finished fermenting (no change in hydrometer reading) plus a couple of days (maybe more - no rush).

Until the gravity readings have been consistent for two consecutive days. For a normal brew the SG should get down to about 1008 to 1012.
In reality with S04 at a constant 20C you should be there in less than a week.
