GW says to add post-boil hops when the wort temperature has fallen to 80C. With my immersion chiller turned on though, the time the hops spend in the water will be much less than if the wort cools naturally. Should I e.g. use the IC to get down to 80C, turn the tap off and add the hops then turn the IC back on half an hour later?

Yep. Chill to 80c-85c then switch off chiller. Add the hops and stir gently every few minutes. I usually stir gently for the whole 20 mins. Don't stir vigorously as it will bring the temp down.

Ta! For AG#2 I got it completely wrong - forgot about adding the hops till the temperature fell to 50C. Oops! I'm going to be more prepared next time.
