Get advice on making beer from raw ingredients (malt, hops, water and yeast)

St Austell Trubute

Hi Guys,

Got the ingredients for a Tribute clone. Looking on the mega Tribute thread there are quite a few different yeasts used in the recipes. My options are 3 dried yeasts - Notts, SO4 and SO5, and Hopback. Any thoughts on which would be best?

I fermented Tribute with US-05, it ferments cleanly and doesn't mute the hops.
The brew came out well but I think I'd reduce the latter Bobek edition just a touch.

It never ceases to amaze me how many people use US05.

I thought it was for American beers like Budweiser. Do I need educating?

Yes, US-05 is quite a versatile yeast for hop- dominant beers in particular, i.e. it isn't overly generous to malt. It is popular here in Australia due to its tolerance to temperature, both in set point and variation as many brewers don't have any form of temperature regulation but it is quite reliable in that situation. It does an excellent 'faux lager' at around 14-16C, higher for more traditional ales and above 20C it still produces quite an acceptable profile. One of the first things the average Australian consumer of commercial beer notes when trying decent home brew is the presence of hops, none of the local beers have much hops character... or any character for that matter!

As far as the St Austell Tribute goes I really don't know to be quite honest, never tasted it.

There's more to American beers than Budweiser.

In my limited expirience, US-05 doesn't lend much to the malt profile but if hops are what you want to the fore then this dry yeast is worth a try.

Thanks for the US-05 info.

I don't think it's what I'd usually be after, as even s-04 is a bit clean IMO and I prefer malty beer.
I'll bear US-05 in mind for future blonde beers though, thanks!

I use SO5 for APAs and like in it those.

However I would expect Tribute to use an English Ale yeast and my question should really have been does anyone know how close SO4, Notts or hopback would be?

Failing any other input I will try Notts as neutral but English!

My first brew of Tribute used Muntons Gold yeast.
For a first try, the beer was surprisingly close. I think Danstar Nottingham will attenuate too much.
