Get advice on making beer from raw ingredients (malt, hops, water and yeast)

Hi all, im about to brew up but a part of the brewing is to steep one of the hops, any help as i think there will be more than one way of steeping the hop/hops at the end of the boil.

The normal way is to start cooling the wort from boiling as usual, but stop cooling when it gets down to 80C, chuck the steeping hops in and leave it for 15-30 minutes before continuing to cool to pitching temperature.
