After the primary feremtatiopn 72h or so I believe the big ale breweries cool the beer to about 10C, for how long? Then bottle or keg? Basically I need some more info on conditioning beers and the pros and cons of different methods. Any good links or info appreciated. I want to speed up the conditioning process to pro speed. Cheers. To finish primery in 72 hrs you really need to have everything perfect.
Pitch the exact amount of healthy yeast at the right temperature and keep conditions just right for that particular yeast strain.
I believe from a few of your recent posts matt you're in the process of setting up a micro brewery on the cheap!

Nothing wrong with that, but get your basics right
