Hi folks.
with havin no work no until the new year, i thought id do a brown ale, loosley based on 'that famous one' !!
This is the recipe...
Fermentable Colour lb: oz Grams Ratio
Pale Malt 5 EBC 8 lbs. 14.0 oz 4030 grams 80.5%
Crystal Malt 130 EBC 0 lbs. 10.1 oz 285 grams 5.7%
Chocolate Malt 1050 EBC 0 lbs. 4.0 oz 115 grams 2.3%
Brown Malt 150 EBC 1 lbs. 4.3 oz 575 grams 11.5%
Hop Variety Type Alpha Time lb: oz grams Ratio
Fuggle Whole 4.6 % 60 mins 0 lbs. 2.6 oz 74 grams 100%
Final Volume: 23 Litres
Original Gravity: 1.048
Final Gravity: 1.012
Alcohol Content: 4.7% ABV
Total Liquor: 35.5 Litres
Mash Liquor: 12.5 Litres
Mash Efficiency: 75 %
Bitterness: 35 EBU
Colour: 86 EBC
Now heres the thing.. I thought I had some S0-4 yeast which i thouight would be nice with this recipe, but we all know what thought did.
For such short notice I have only S0-5 american yeast.
I have some 1098 Wyeast, but needs to be upped to a Ltr starter, so thats at least 3 days away.
So, my knowledgable freinds, my options are...
1.. Go for it, S0-5 will be ok in this type of recipe.
2.. No, S0-5 will not work, but what the hell... a brewdays a brewday.
3.. Dont do it, get that starter going, brew it later.
4.. Get a brew on regardless, but a differant recipe to suit the S0-5.
Advice and opinions weclome please

I've used US05 for UK beers before. Makes good beer, but i always find for UK ales its too clean. I always think to myself i should've waited and used the UK strains. Now i'd rather wait a few days, and make it right.

another reason i was in a hurry to get a brew on, was to test new manifold in new mash tun. I didnt like the perforated false bottom thing that came with it. I've now got a good old slotted copper manifold type, and it worked a treat.
So, anyway, i went with S0-5, and its fermenting away great at the moment.

I like to have some 05 on hand at all times. If the yeast on most beers I brew goes belly up for some reason I'm still good to brew.
I'm just here for the beer.

Oh well 05 looks to be fermenting quite vigorously, and smells really nice in FV , so looking forward to the final product with this one.
