Overnight FWH

Post by Spud395 » Wed Dec 28, 2011 12:24 am

Doing a split brewday at the minute it here

FWH's in the boiler with the wort from the mash and left overnight, to be boiled in the morning.

FWH is supposed to bring some flavour and aroma from your early hops as well as bitterness, I'm wondering if a kind of a dry hop effect will be had by leaving them in overnight.
I'm pretty sure this will not be the case, but sure

Anyone tried this or have an opinion on it

The alpha acids in hops break down at varying temperatures Myrcene and Humulene do not survive the boil, however the oxidation products of both compounds do. A lot of the benefits of the overnight FWH will depend on the hop used. A hop with a high Myrcene percentage will oxidise to produce Linalool, amongst other things and that will enhance the floral aspect of the aromas and flavours by the hop variety. With hops high in Humulene the epoxides and diepoxides produced will enhance the herby and spicy aspects of the hop.

If you want to get a better understanding of whats going on when we clod in a load of hops, I can recommend Ray Daniels book "Designing Great Beers".
