Here's a recipe I devised for a nice chocolate stout:
Chocolate Stout
Date:
Gyle Number:
Fermentable Colour lb: oz Grams Ratio
Malt Extract Syrup Pale 5.5 EBC 3 lbs. 4.9 oz 1500 grams 68.2%
Crystal Malt, Dark 300 EBC 0 lbs. 3.5 oz 100 grams 4.5%
Chocolate Malt 1050 EBC 0 lbs. 3.5 oz 100 grams 4.5%
Flaked Barley 0 EBC 1 lbs. 1.6 oz 500 grams 22.7%
Hop Variety Type Alpha Time lb: oz grams Ratio
Fuggle Whole 4.9 % 90 mins 0 lbs. 0.4 oz 10 grams 66.7%
Fuggle Whole 4.9 % 15 mins 0 lbs. 0.2 oz 5 grams 33.3%
Final Volume: 10 Litres
Original Gravity: 1.058
Final Gravity: 1.014
Alcohol Content: 5.8% ABV
Total Liquor: 14.7 Litres
Mash Liquor: 1.8 Litres
Mash Efficiency: 75 %
Bitterness: 14 EBU
Colour: 110 EBC
My main question is about the proportions of dark malts to the light extract? I'm hoping it will be a rich, dark stout with a nice chocolate flavour. I'm also toying with the idea of adding some real chocolate to the fermenter?
What do you guys think? Thanks in advance.

Re: Mix grain and extract stout recipie help
I recently did a three gallon batch of stout (all-grain) that I used 8 ounces of roast barley (will use 12 next time), 5 ounces of chocolate wheat and 4 ounces of special roast in the recipe that came out pretty good. I think you need to up the roasted grains a bit, especially if you aren't going to use roast barley.wowninjas wrote:Here's a recipe I devised for a nice chocolate stout:

I also think the large amount of flaked barley might be a problem in an extract beer.
I'd also up the hops a bit.
I'm just here for the beer.

Bottled this yesterday and while it's not that dark it is quite nice. A little thin (should improve with conditioning) but with a nice coffee taste to it and a mild bitterness.
