I personally would try the liquid yeast route. When I first used liquids, maybe around 10-15 years or so back, I think it was the biggest leap forward in the quality of my beers that I've experienced.

Before I get some though, would you guys say that 4% Crystal is possibly too low to achieve a sweeter finish? I mean 500g of Munich would be over 10% of my grain bill, so is it as simple as my grain bill is always going to produce a dry beer?
Might avoid the sweat beer myself!

It was this recipe. Mash temp was 68C, but that was an overnight mash and it had dropped to about 60C by the morning, so unless your thermometer is way out I don't think mash temperature is your problem. I find that stronger beers (5% or more) tend to have more flavour, so you could try upping the malt and hops.
