Hmmmm with all due respect it's a mix of the two, whether or not you choose to embrace the science part is another story, but for consistency sake it's best to at least get into a bit of the science.

Hi

My brews are normally done in three days, I then give it an extra day, and then chill for 3 days and put in the keg to condition.

I think the trick is using healthy yeast, making sure zinc is in the brew (Only mineral wort doesn't have that yeast needs), oxygenating to the correct level, and then keeping the temp right. (and Ca level is OK as I use ro water)

Since I've got all the above right, yeast ferments well, and then floccs well.

I recently had a tour of the brewery in the University collage in Cork, the brewing professer that gave the tour might disagree with that statement.

Since building a fermenting fridge I now get full fermentation in 3 days using dried yeast (US-05 or S04) everytime, I then chil for a few days until I get time to bottle or Keg. Pre fridge fermation was taking anything from 5 days to 2 weeks.
