I have read on the wych wood web that there put lemon in the boil and in the conditioning tanks when there make there ginger ale, there also say it vital to the ginger ale i have also read this on other web pages. When i have tried to find out why lemon is vital to making ginger ale i have came up blank. So what i would like to find out is what does lemon do to the ginger ale ? also why is lemon vital to making alcholic ginger ale?

It's not vital in the sense that you can't make ginger ale without it, it just provides a nice acidic sharpness to complement and accentuate the fire of the ginger.

Thanx befuddler for clearing that up for me.I will flash boil some lemon peel and put some lemon peel in my conditioning jar. I had some hops and malts to use up( First gold and centinal) so i brewed a batch of ginger ale about three weeks ago.It came out alot stronger than i would have liked, it came out at 5.5% i was looking for more 4.5% abv. This ginger ale is for my christmas stock..
