got 5 gallons on the go yesterday but only had a nottingham yeast in the draw, i usually have safale4 and wondered what sort of difference it will make

S-04 is the Whitbread-B strain used by many, many commercial English breweries. It is very similar to Nottingham in the sense both are English ale yeasts selectively bred for modern brewing conditions: fast start and finish, high floccution, very compact sediment, well-adapted to cylindo-conical fermentors and serving tanks (as opposed to traditional wide or open fermenting tanks, top-cropping, etc), with a dry finish and relatively neutral aroma/taste profile.
You might not even notice a difference, but most people report S-04 is ever-so-mildly maltier, tarter, fruitier, breadier.

I find notts attenuates much further, leaving a drier beer. Still good though.
