I know I am leaving it late, but I plan to brew a failry low abv Christmassy session beer in the next couple of days.
To shave off some time, instead of dried cherries it was recommended to me to use a cherry syrup.
I know there are issues with some preservatives affecting fermentation and conditioning.
I have two I have two bottles in front of me here:
Blossom Cottage Morello Cherry Cordial
Spring water, sugar, morello cherry juice concentrate (25%), citric acid, natural flavourings, sulphur dioxide
or
Teisseire Mix Cherry Syrup
fruit juices from concentrate, glucose-fructose syrup, flavourings, colouring (anthocyanin - elderberry extract), no preservatives.
Which to use in my Christmas Beer?? And at what stage would you add it? And how much? I am thinking about 350ml in a 19L batch added to the secondary.
Which cherry syrup to use in Xmas beer?

Re: Which cherry syrup to use in Xmas beer?
People on here tend to use the polish branded syrups for making various non-beer brews so I would have reccomended that first off.
If you are going to choose between the two you have, definately the second. No water in it so will be more intense and also no preservatives.
I would bung it in the fermenter after primary fermentation has ended. Dont forget that the sugar in the suryp will add to your ABV if your trying to keep it low!
If its unopened and properly sealed in a glass bottle I probably wouldnt heat to pasteurise, just bung it straight in, you loose some aroma whilst heating it etc.
Dean.

Fantastic - many thanks Dean!
Do you suggest an amount for a 19L batch? I don;t want to overdo it so was thinking about 250ml?
Cheers
