Hello all
I brewed my first AG (Mysterio’s SNPA clone) and took a gravity reading after 7 days in the primary;
It came out at 1.006 with a OG of 1.062 so an ABV of around 7.4%
As this recipe was supposed be around 5.6% how have I ended up with a brew so alcoholic? Was it due to a high mash efficiency (I did fly sparge)? I used US-05 and the fermentation wasn't especially vigourous.
Will it mellow out after 3-4 weeks bottle conditioning?
Any advice would be appreciated.

I suspect a lengthy mash at a low temperature. It won't be much like Sierra Nevada Pale Ale, but it'll be a nice warming, hoppy, "digestable" ale nonetheless. Yes, it will likely taste divine after a month of conditioning.

yes, i mashed at a lower temp - was supposed to be 66degC and ended up 64.5degC (lost too much mashing in). The mash was only 60mins though.

That's why the wort was so very fermentable then, but I'm still pretty surprised the Chico strain attenuated all the way to 1.006! Well, whatever, like I said, it'll be delicious. Just call it a Belgian Pale Ale.
