I would like to stop my beer fermenting a couple of points above my
desired fg.

Do I just turn my heater off and just start crash cooling?

You can do that, but why do you wish to do it?

You will not kill the yeast, so if you plan to bottle your beer, it will reach that FG anyway + you need to re-calculate the amount of suger used for carbonation.

That's the way many micros do it, so that they can get the beer into the pubs quicker. You can let it reach FG if you're in no hurry, though.

I just add 5gms of dissolved sugar to the firkin, and then let it condition for a month.

I usually allow 1 week at room temp and 3+ weeks cellar temp.

I think he means that 5g of sugar is not enough to carbonate a 9 gallon firkin.
