Hi,
I brewed a beer back in march, an american pale ale with amarillo and citra...a light session beer which i hoped would have great hop flavour. I used a recipe from a brew book so presume its tried and tested and certain seemed a decent solid recipe.
Thing is its just not right to taste...its by no means undrinkable so dont think its 'off' or has an infection but its just both not what i hoped it would be or quite 'right' and was wondering peoples advice so that i know the likely reason for next time.
Its got a sort of odd yeasty taste..but not clean yeast, is yeasty but a sort of fabric elastoplast taste to it..maybe slightly buttery too.
My thinking is it is likely to be due to esters from too high a fermentation temperature. I had it fermenting in the garage with an immersion heater but it wasnt getting high enough so brought it inside and put the heater back on. But there were times i looked at it and it was up to 24-25C so switched the heater off..then it went a bit too cool so turned it back on again! Does this sound like a potential source of those flavours?
I've now got a fermentation fridge and the last two brews (using the same yeast) have been fine.
Is it likely to settle out with age or no getting rid of that taste?

Sounds like off-flavours from stressed yeast to me. Big temperature swings are actually much worse than a non-ideal but steady temperature.

The flavours will mellow with time and it might turn into something quite tasty and unusual.

Thanks...thats what i thought..has never happened to me before and thats the only thing different i can think happened between all my brews...definately tastes 'unusual' but i do think its mellowing with time a bit..
