Temperatures?

Hi folks. I've just finished making up my temp controller, but I'm not sure about temperatures. What should I set it at for fermenting, conditioning and storing?

I normally use 18°c for ale, 12°c for lager and conditioning.

Pretty much as above - I start at 18 - 19C for a week then increase to 22C for a few days before cooling in a couple of steps to about 10C for the last couple of days to start getting the yeast to drop.

Great, thanks. So 12 deg for conditioning, what about general storage?

I struggle with lack of space in my brew fridge. I am planning on building an insulated cabinet, but I doubt I could keep anything at that temperature without my own nuclear power plant. Boy, I miss my cellar!

I ferment at 18 - 22 for ales and whilst I haven't tried lagers, i'll probably run between 8 and 13 or so. For storage I just use ambient, I don't store long enough for it to be an issue.

+1 for the 18 - 22 for ales, for lagers anything between 9 & 12 degrees, for conditioning 4 or 5 degrees for ales for a week or so. For lagers between 0.5 and 2 degrees ! Just keep an eye on the beer just in case it freezes like a batch of my larger did :oops:
