First brew.

Hi going to be doing my first AG brew this week. Looking at the recipe for 'Old Peculier' It does not state mash time, boiling time etc. Is there are 'rule of thumb' for these, i.e an average??? As this is my first brew i don't want things too technical, also how do you work out evaporation rate when working out how much liquor to use,i know i can work out dead space in my masher etc, but boil away, is this just one of those thing you work out as you go on?? Any help on this first of many brews would be appreciated. Thanks. (If anyone could say how they worked all this out, Cheers). :D

90 minute mash and boil is common but a lot of people happily do 60 minutes for each and produce equally good beer. Alternatively a any combination will also work.

Boil off is difficult to calculate. Somewhere between 10% and 15% per hour is common. Gas is sometimes more vigorous and can be on the higher side. It depends on the ferocity of the boil and if you're outside in winter you won't necessarily get as strong a boil as you would in summer so less boil off. You'll start nailing it down after a coulle of brews.

Hi DustyDog

I did an OP yesterday - I mashed for 90 mins, sparged twice for 15 each and boiled for 90.
I lost about 2lt (so about 10%) in the boil but as Matt said it does depend on size of boiler (diameter) and how strong a boil it is. So you might need to work this out after the first few. What recipe was you going to use?

Hi Dustydog

Welcome to the world of all grain brewing--you'll love it!

What quantities of grain will you be using, and how much beer does your recipe tell you you'll end up with?

You're definitely going to lose some liquid during the boil but your recipe may account for this. Or you may need to top up with water once you've got the wort into the fermenting vessel.

If you can give us some details of the recipe we can be more specific in our replies.

Whatever happens though, you're going to have fun!

Hi, I like the easy approach and use Brewmate software. Put in all your dead space etc. Select and efficiency of about 70%. It will work out the rest. Only little niggle is if batch sparging it doesnt tell you the quantitys, but there is a little program on here that does it. First time I used the software I thought the water quantity was a little high, but it was spot on. Works out grain absortion, hop absortion and takes into account all the dead space.

Hi, thanks for your replies. The recipe i am going to use is the old peculiar that is on this forum. I will boil my shiny new boiler for an hour to see what the evaporation is and also to see what setting i need for a nice rolling boil. As you have all said, it will take a few brews to get the hang of what takes place etc. Again thanks for all help.
