Freshly fermented Cider has slight vinegar taste
Chaps Ive just made 95 litres of my first cider from apples from the garden. I fermented in my stainless steel FV with a lid on (not under airlock). Fermented for a week at 24 degrees down to 1006. All seemed well , cider smells good but when i tasted it , it had a slight vinegar aftertaste. I know i should of fermented under airlock but I didnt have a big enough vessel and sheer Cider greed drove me to using a lid only. I though if i fermented quick enough the CO2 would keep the air off. I bottled and kegged anyway. Have I ruined it or is it normal to have a slight vinegar taste prior to conditioning ???

any off flavours will either reveal themselves or wear off with time, so seeing as it's not too bad, you might be okay!
