I'm going to do a AG stout only 10 or 12litres but I don't want it going all over the place!

Will a 20litre FV be big enough or will I have to use a 30?

I'd prefer the 20litre because I could get second 10litre FV into the fridge at the same time.

What yeast are you using?
I recently did an Imperial stout and calmed it down by brewing at low side of temp yeast was happy with.
I was using a Duvel yeast so started at 17C. I was brewing 20L in ~30L FV.
A bit of foam came through lock but not much.

I'll probably use S05 or possibly S04 and S05 together, it is a RIs I'm planning.
Did you aerate with an air stone or mechanically?
I want the stout on asap but I've run out of brew and need to make the best use of my fridge space.

I normally aerate by dropping from boiler to FV through a sieve.
I use 2/3 yeast cake from previous brew for mine and it was off in under 12 hours.
If I'd started at 20C it would have been coming out the door of my fermenting fridge.

I've learned my lesson :oops:

Given the tendancy to go off like a rocket I would still put a blow off tube on just in case. I had a recently have had problem with slow fermentation, with dark brews being the very notable exception.

I've done a couple of Stouts recently with US05 and neither have escaped the FV. Both were between 18 and 20ltr in a regular sized FV.

My RIS with S-33 has been quite well behaved, that was 12l in a 25l fermenting bin - did keep the temp low (16 degrees) for the first 2 days - then slowly raised it to 20 over the next 4 days

Krausen went to about 6" thick, but nowhere near the danger zone :)

DJ(2) : N'otin....
In the Keg : Nada
Conditioning : Nowt
