Step mash

I am trying to brew a wheat beer on monday but it calls for a 3 stage step mash could some on tell me how this should be done, I have only been brewing for a short time so I need all the help I can get #-o

The most authentic way is by decoction, where you draw off part of the mash and boil it before recombining to raise the temperature.

The easy way is by boiling water additions, in which case you would start out with a fairly thick mash and end up with a fairly loose one.

The even easier way is not to bother with the stepped mash at all. It's not essential to make a good wheat beer, it just helps to make an authentic one.

I tried a single stage stepped mash on a lager I did recently. I was surprised at how much boiling water I had to add to try and bring the temp up from 50c to 67c. In fact I ran out of space in the mash tun and only got to 64c. Next time I will have the first step a bit higher. Brew came out really good though.

In fact I brewed my first (dark) wheat beer yesterday with a single mash at 65c so will wait to see how it turns out.
