Hey. I was wondering what the liquor quantity to grist ratio should be for mashing? Is there a way to work it out? Or is there just a general rule of thumb. Also. How long do you sparge for? Is there a specific gravity reading on a hydrometre to aim for? Sorry if i sound thick as a whale omelette here. Im new to homebrewing so any info will be much appreciated
Thanks.

Liquor quantity
Re: Liquor quantity
2.5L per KG is the rule of thumb.
You want your output from your mash tun to be about 1L per minute and sparge no lower than 1.008 (you will need to temp correct)

Welcome to Jims, Biganth.
What you are basically asking there is How to brew !
Best thing to do is get a book... This site is fantastic with lots of good advice and people who can answer almost every questions but you will get different opinions and personal preferences and it can sometimes be time-consuming to find specific information... A book is a great way to start...
One of the best is this one
http://www.howtobrew.com/
which has been transferred online by the author. Read Read and Read.
Then pick a recipe and brew it. If you can, try find a local brewer who can Talk/walk you through the first brew or show you how it's done.
Best of luck with it.
(BTW - to answer your questions - a typical liquor ratio might be 2.5 - 3L per kilo grain but might go up 7L per kilo for a no sparge beer (look up BIAB). Sparging could be non-existent to up to a couple of hours. The gravity reading is dependant on the type of beer you want. So 1038 for a 3.7 - 4.0% for a mild to 1100 for a russian imperial stout and those are just 2 examples)

Re: Liquor quantity
Follow a recipe which specifies the mash and sparge volumes ideally.
As a rough guide I find I need about 7l of water per kilo of grain. Of this 2.5l per kg is used for the mash, the rest for sparging. Fly sparge should be around 1l per minute, batch sparging - leave for 15 - 30 mins and drain. Never bothered taking gravity readings during sparging, just use the amount required and then boiled.
