Surely that can't be right! All of their hop-forward beers (Punk, IPA is Dead, Hardcore, Dead Pony Club, Chaos Theory, ...) have basically zero flavour contribution from yeast. Makes much more sense to me to use a west coast ale strain instead (WLP001, 1056, US05).

Actually darkonnis is correct, British ale yeast is the one. Ask secue, he interviewed the head brewer.

Although like with my own beers, if you dry hop in big enough quantities its pretty hard to tell which yeast was used.

I thought so, I read that they use the same yeast for all their brews and in in another article I read that they use british ale yeast. May even be in the interview you mention Baz.

I'm certain the sheer volume of hops they use will pretty much ruin any chance you have of tasting the yeast, they also filter their beers which will make it harder still.

If its a British yeast, I'd imagine it's wlp007... that can be pretty clean at low temperatures and highish pitching rates.

I don't think the yeast is critical when trying to clone Brewdog though, it's all about getting it bone dry and hoppy as hell.

So, I will encrease the hop rate at flame out and dry hop + use the S-05 as the White Lab is not available in Switzerland.
I've the Fermentis range or Danstar or some classical Wyeast.

And what about the malt bill? It is good like this in your opinion?
Seem that they change a little the text on the website, or I miss this sentence, it's about a stout, not porter, but a light stout I think:

I think that might be in the right ballpark... its going to be damn tasty anyway.

Make sure you sprinkle the carafa over the other grains while sparging, that way you'll get all the colour without too much bitter, burnt flavour.

How did it come out? 75 mins seems a long time to boil Simcoe from. Its a hop that I find best to do shorter boil with larger amounts of hops

I had "hoppy cristmas" of theirs over ... well... Christmas and that was a pure simcoe pale brew.

I wouldn't call it cloning but I did an inspired brew based on it 5kg MO, 250g crystal, 100g simcoe. The main take away was it ended up hoppy in the sense that a mainstream ale would call itself hoppy (hopping hair etc) and not brewdog hoppy. So dont hold back on the hops. Lots and lots and lots in the last 10 minutes / steeped @ <80c.

Additionally I concur on the bitting. I've only used it solo in this brew but it had an odd bittering until it mellowed about 5-6 weeks post bottle. Next time I use it solo like that ill be doing my latest fad of getting all the IBU from the late hops and only 3-4 from the initial ones.

Shouldn't be necessary as Carafa 3 is dehusked for that purpose.

You really need to slide all your simcoe to the last 5 minutes boil and hike up the weight massively for your bittertness charge, hop up in your recipe in particular 0 min additions then hop up during dry phase, then hop up again during dry phase. That'll get you where you want to go, current load won't. Best of luck. :)
