Hi All

Getting into the swing of things with this all grain brewing and loving it , but love hoppyish pales and blondes, especially tropical fruit tones, would love to try an IPA too, currently crash cooling DENNIS KINGS GALAXY DELIGHT and making SEYMOUR’S CITRA GOLD , has anyone got any tried tested brews that I could try , I do have the currant HOPS on hands but would order more if needed.


300g Galaxy
200g motueka
100g EKG
500g Cascade on order
100g citra
100g amarillo
500g equinox
100g willamette
100g progress

Have loads of grain , my base malt would be pale malt

With a lot of cascade on order, might I suggest an Epic Pale Ale clone. I've made this a few times now and it's one of the best pales I've tasted.
OG 1055
FG 1012
80% pale malt
10% caramalt
3.5% carapils
6.5% pale crystal malt
Boil 90 minutes
Cascade 75 mins for 7.6 IBU ~ 9g
Cascade 30 mins for 9.5 IBU ~ 13.5g
Cascade 10 mins for 11 IBU ~ 33g
Cascade at knock out steep 20 mins - apx 11 IBU ~ 41g
Cascade at knock out +10 mins, steep 10 mins - apx 7 IBU ~ 41g
Ferment with a clean ale yeast, I use wlp007
Once terminal gravity has been reached dry hop with 57g Cascade for 5 days.
Cool the beer to 4 degrees C and add another 57g Cascade

You will be surprised at the complexity the cascades create.....it doesn't taste like you would expect of a single hop beer.

Have you done any SMaSH brews? I highly recommend the Amarillo SMaSH. Amazing what can be achieved with just 1 hop.

tried a citra smash and an amarillo smash , from greg hughes book, turned out nice :D

That looks quality. I need to dry a double drop dry hop like the above.

I really like Motueka in pale and blonde ales. Usually with another NZ hop like Nelson or Green Bullet.

I can highly recommend Mosaic, Nelson Sauvin is amazing (when you can get it).


I have to say one of my favourite hops at the moment is Eldorado, I came across this almost by mistake when a mate gave me some of these, I went on to make a SMaSH which once matured was one of the best things I have ever brewed. Came in around 35 IBU however all late (15 mins and after) hopping, loads in a hop rocket and also a 100g dry hop.

Good to hear about the Mosaic - I've heard good things, and got some coming along with some Galaxy. I'm also keen to try Eureka and now Eldorado as well!
