Get advice on making beer from raw ingredients (malt, hops, water and yeast)

As the title suggests, I'm after a recipe for a stout that's not quite as strong as an Imperial Stout, but maybe up around the 6 or 7 percent mark. I want it a shade sweeter than normal, but I don't yet know how to engineer that variable into the recipe.
Any help welcome.

How about Graham Wheeler's clone of Guinness Foreign Extra Stout. OG 1073. ABV 7.2 percent.

Stouts sometimes add lactose if you aren't affected by it....even a touch of natural sweetener like stevia. Mashing warmer will also make a maltier, sweeter beer.

Secondary 1 : Empty
Secondary 1 : None
DJ(1) : Nowt
DJ(2) : N'otin....

Conditioning : Nowt

I can give you my version of a Milk Stout but it's not quite 6%? Based on the Ron P Milk Stout.

I brewed one with molasses added at flame out, and also as the primer. Pm me if you want and I'll send you the recipe.

I brewed this a while back, it got some very good reviews from those that tasted it.
You can just increase the overall grain volume to increase th OG should you wish, but this should give a good starting point. I mashed at 68 to keep some sweetness to the beer.
OG 1049. 36 IBU
77.5% Crisp Pale Malt
5% Oat Malt
5% Roasted Barley
5% Wheat Malt
2.5% Chocolate Malt
2.5% Crystal 120
2.5% Black Treacle
1.1 g/l Northern Brewer 60 min
0.6 g/l Styrian Goldings 60 min
0.6 g/l Styrian Goldings 10 min

looks good but what yeast did you use? Some yeasts like wlp002 can leave some residual sweetness
