Small question about FV temp after fermentation has finished
Small question about FV temp after fermentation has finished
Recently set up a brew fridge and delighted at how the inkbird controller is maintaining the temp. My question is, do I maintain the 20°c until I bottle (2 weeks after pitching the yeast) or do I drop the temp now I'm able to and if so to what?
Re: Small question about FV temp after fermentation has fini
Best bet is to reduce the temperature a bit for the last few days to help the yeast settle out.
About 16-18C should be OK, though many people go much lower. I prefer to let the yeast keep working - imo it's best not to go too low as this will inhibit the 'cleaning up' process that goes on as fermentation subsides (in fact some authorities* recommend increasing temperature slightly at this stage for this very reason).

Re: Small question about FV temp after fermentation has fini
I tend to leave beers in the FV for 3 weeks, even if they have finished after 10 days, to allow the yeast to tidy up any by-products of fermentation. For the last 2-3 days, I'll drop the temp down to 2-3c to help clear the beer before bottling.
