Bitterness

Hi all hoping you can help me out here. I have a few all grain brews under my belt now but I seem to have a problem with bitterness when brewing with high alpha hops such as citra. I use beersmith to calculate the desired level and I tend to add very little at the start of the boil for bittering...usually enough to get around 25ibu. I do however throw a lot in at the end of the boil ... last 5 mins and at flame out. My only conclusion is that the boiling wort is still extracting bitterness at the last minute and flame out. My next hoppy brew I thought about cooling the wort to around 80ºC before adding my late hop edition. Any advice will be greatly appreciated

I always cool to 80c before adding flameout hops.

If you want the beer to be 25 IBU in total you can adjust the overall bitterness in two ways. First and simplest is to decide how many aroma hops you want then add the bittering hops until the total hits 25. The other way is to add your hops at 60 minutes and 5 then use the bitterness adjustment button on the top ribbon bar until again you get 25 IBU. On the design tab you should have a button that displays the SG:IBU ratio, if not add it using the add button. This enables you to get an idea of how bitter the beer is going to be. After a few brews with this you can start to adjust your additions to hit the ratio you like. I'm not a fan of overly bitter beers so like to see it around .65.
