Yeast : S-04 SafAle English Ale

Now the disasters!........... :oops:
Mis calculated strike temp. Only had the liquor at 72c when 80c would have been ideal. Needed to add an extra 10 ltrs at 80c to get the mash upto 66c.

Then the strainer come adrift doughing in - yeah we've all been there. :roll:
eventually got the mash tun emptied, refitted strainer and then the mash began properly.

Batch sparged but was 10lt short on the collected wort. OG of second running was still @ 1026 so did a 3rd rinse to get the correct wort quota.

Now the good bit 8)
Final OG was planned @ 1045 but we got 1050 - me thinks this will be Very, Very Wherry if that S-04 does its stuff.
Looks good already - first activity after 4 hours, demijohn airlock had to changed/cleaned after 12 hours!

Sorry no brewing pics, so much panic over cockups!
But i'll post pics of the new strainer in the equip section later.

After 10 days in primary the S-04 had certainly worked its magic.
The brew was down to 1.010 from 1.050. (Racked on Wednesday.)

I was going to put into secondary for another week but it wasn't needed.
Straight into 2 cornies plus 15 bottles - sorted!
Plus a glass for sampling.

It's so clear already, excellent. 8)

I just think that due to the extra OG, that wasn't intended, it might need a few weeks longer in mature.

Any views on maturation times for Wherry style beer @ 1.050?

But then again, probably not as many as some of the boys on here :wink:

Taste wise - a tad sweet and still far to much hop bitterness, but this should mellow and allow the full hop character to come through.

Now the summer is here i'm desperate for my kegerator :cry:

Missed this first time round but I'd say that's a fab effort for the breweries 1st outing :wink:
