There's no harm in waiting. You could, if you wish, transfer it to a secondary vessel for several more days, or longer, before bottling. It will continue slowly to ferment out the more complex sugars for weeks to come.

I might just do a transfer to 2nd vessel as you suggest, as there's a lot of interest from friends and colleague (looking for free samples!Brotherton Lad wrote:There's no harm in waiting. Do something else with a different hop. You don't know what this first one is going to taste like yet, you might not like it.
