MY Procedure(not saying this is necessarily the only way or even the best but it has worked well for me).
Second day I cut back the foam, I do this by moving the spoon edge on through the barm, kinda like a knife movement( i try not to disturb the liqour). The volume of the barm more or less halves after a minute or so of that, Then I skim the barm off into a bucket and throw it away.
Next day the barm is far thicker(yeast wise) and is almost a pellicle, as there is less co2 in it to bulk it out, the skim off that(into the sterilised sandwich box) has been delivering 200ml of Solid yeast by the time it settles. MR Malty reckons 60ml is enough for 25ltr at four day old. Of course you have to adjust the slidey things to "thicker" yeast and "no" dead cells.
