Making Sour Beers/Lambic’s?

Good recommendations from JMC however Orval, although definitely worth having, isn't really a sour as it only has brettanomyces rather than souring bacteria such as lactobacillus and pediococcus. Dryness can sometimes be perceived that way though which is why brett beers are often confused with sour ones.

+1 for Beermerchants. They always have a good selection.
