
Good point about getting air in there, although temp shouldn't fluctuate too much where it is. I will definitely give it three months at least in its demijohn. By then I imagine the Sacc yeast will have given up the ghost, and it will only be Brett left to do the bottle-conditioning. So I will bottle it, prime it and give it another couple of months to prime. Given that I am adding dregs this week, it should be ready in time for umm.. my birthday in May?
Wow, I'll have to get plenty of brews on the go in the meantime to distract me and stop me drinking it too young.
