I'm aging it in bulk which allows me to take a small sample when I want to check it's progress instead of bottling and having to use 12 ounces each time I check on it. This is my usual M O with beers that need to age a bit like the barleywine I mentioned in another post in this discussion.gnorwebthgimi wrote:You're cellaring it... but it's not in bottles?
